For K’s birthday party (22 14-year-olds) I made “cake mix” cookies and
carrot cake. Recipes follow.Easy-peasy, arguably healthy cake mix cookies:
(These are only about 7 grams carbohydrates per cookie! Yay!)

1 box cake mix (I go for the organic, natural brands)
1/2 cup oats
1/3 cup flax meal
1/4 cup oil
2 eggs
1-3 T water (add 1 T at a time
until desired batter consistency)
1-2 tsp. peppermint extract (or
vanilla, but peppermint is best)

Drop by rounded teaspoon. Cook at 350 for 11 minutes. Makes 25-30. People LOVE these; recipe from a friend.

Not healthy at all, despite the carrots, but oh, so rich and good Carrot Cake:
(Not counting frosting, 1/8th of one pan’s worth of cake is about 38 grams of carbs. With frosting, I just think it’s too much.)

2 cups sugar
4 eggs
1 1/2 cup oil
2 cups flour
2 tsp. vanilla
1 tsp. salt
3 cups grated carrot
1 tsp. cinnamon
2 tsp. soda

Bake in 3 9-inch cake pans for 25 minutes (or until done) at 350.

As above makes a great snack, but for the full cake experience, here’s the frosting:

1/4 lb. butter
8 oz. cream cheese
1 lb. powdered sugar
1 cup chopped
2 tsp. vanilla

Mix until smooth.
